Apple and Sausage Strata from Renee M

1 med red onion, diced
1 lb pork sausage
12 slices white sandwich bread
2 Fuji or Gala apples, peeled, cored and shredded
2 cups shredded cheddar cheese
6 large eggs
3 1/2 cups milk
1/4 tsp freshly ground pepper
1 tsp salt

In large skillet, cook onion and sausage until onion is tender and sausage is no longer pink. Grease 9 x 13 pan with cooking spray. Place 6 slices of bread in bottom of dish. Spread half of sausage mixture over the bread. Sprinkle with half the shredded apple, then half the cheese. Top with remaining bread, sausage mixture, apples and cheese.
Combine eggs, milk, pepper, and salt; beat well. Gently pour mixture into baking dish. Cover with plastic wrap, and refrigerate 4 hours or overnight.
Remove strata from refrigerator 1 hour before baking. Heat oven to 325 degrees. Bake strata for 55-60 minutes, until center is set. Let stand 10 minutes before serving.
