Easiest Apricot Chicken from Julie G

2  12 oz. jars apricot preserves
1  8oz. jar Dijon mustard
3  pounds boneless, skinless chicken breasts

Preheat oven to 350 degrees.

In a large bowl, combine the apricot preserves and Dijon mustard. Cut chicken breasts into strips about 2 inches wide and add to the apricot mixture. Generously coat the chicken. Pour the chicken and remaining sauce into baking dish and cook for approximately 45 minutes.

Serve with steamed vegetables or over rice.
