Lemon Cookies from Jen L.

1 pkg. Duncan Hines Lemon cake mix
2 eggs
1/3 cup vegetable oil
1 tbsp lemon juice
3/4 cup flaked coconut
Confectioners sugar

1. Preheat oven to 375. Grease baking sheets

2. Combine cake mix, eggs, oil, and lemon juice in large bowl. Beat at low speed with an electric mixer until well blended. Add coconut. Shape into 36 1 inch balls. Place 2 inches apart on baking sheet.

3. Bake at 375 for 6-7 min or until set (slightly brown on bottom). Cool on cooling rack, dust with Confectioners sugar. Store in airtight container.
